We fell in love with Het Melkmeijse (The Milkmaid) when we first visited Amsterdam during the Christmas holidays in 1999. Since then, we have been back too many times to count.
Jan and his staff are always gracious, unhurried, and very friendly. The food is quite excellent in every respect (always piping hot!), and the atmosphere is old-world eclectic Dutch --- it reminds me of classic restaurants of the 1930's.
The location, just one block east of The Barbizon Hotel and a 7 minute walk from Centraal Station, is quite convenient. I highly recommend this charming, reasonably prices restaurant, but be sure to call ahead (020-625-0604) for reservations because it fills up fast most nights!

When we visit Amsterdam we normally stay at the Barbizon and "the milkmaid" has become a bit of a first night tradition. Service, surroundings and food are always wonderfull and we've never been disappointed. Jan and his team turn out "French"/"Modern" classics from a very small kitchen, the wine list is good and reasonably priced.
Get a window seat or outside on the canal side and watch the crowds go by on Zeedijk.
